Larry joins the show from Rome where he was spending time working with FAO on international food safety things. After a quick game of guess the guest, the three talk about IAFP, Larry's Ivan Parkin Lecture and the large topic of misinformation/disinformation in online and social media discussions. The topics they cover include leftover soup issues, supersharers, botulism from home canned foods and how almond milk might get contaminated with Listeria. Oh they also talk about how bear meat from Saskatchewan led to some parasite illnesses in the U.S.

Food Safety Talk 305: Walking Cud Factories

Don and Ben are joined by surprise guest Paul Breslin from Rutgers. Paul is a geneticist who works in the area of taste and when he heard that Don had a podcast he had to be on it. After Don plays his favorite, but Ben's least favorite game of "guess the guest," where Ben almost got there, they start in on food, food chemistry, genetics and evolution. The guys talk about the ubiquity of fermentation in human foods, cooking, why foods taste the way they do, the evolution of taste receptors. They also get into questions like what does eating pure DNA or RNA taste like. They talk about hot foods/spices, electronic noses for pathogens and spoilage and some other stuff.

The guys go on to play a game of twelve unexpected ways you can get food poisoning (and Don lost badly). Ben and Don talk about highly pathogenic avian influenza and its impacts on the food system/food safety. The episode ends on a deep dive into followup from a Risky or Not episode and probabilities of getting sick from eating a dish made with (at least) raw chicken everyday.

Food Safety Talk 302: That's Kroc With A 'K'

This was a shorter one with the guys having some scheduling issues. The episode opens with Don and Ben talking about The guys go on to talk about how they are probably cleaning their water bottles incorrectly, according to the Internet. They talk about some criminal charges hitting a cheese maker who was linked to a Listeria outbreak and do a bit of a deep dive on soft cheeses The show ends with a couple of quick items on consuming a lot of Vitamin D, vegetables in Thailand and the risks of being inside of a hockey arena that's not related to eating gum off of the ice.

The guys then go into a new law requiring bars in North Carolina to meet the Food Code requirements if serving food. They do a bit of followup on chicken washing and the show ends with a discussion on ultra processed foods.

This leads to some recall communication talk. Ben masterfully gets Don to do some homework for him (and disguises it as a fun game, which it was not). The guys go on to talk about vibrio infections, the impacts of outbreaks on Chipotle and whether a toilet lid matters when it comes to the aerosolization of poop particles when flushing a toilet. Ben starts the non-food safety portion talking about The Curse (and how it made him feel dumb) and then things move into food safety through Nathan For You. Ben tells Don about his new obsession with the English Premier League, and coincidentally a job doing food safety things for one of their clubs. The guys talk about things that they would or could do if they weren't in food safety. The guys go on to talk about frozen corn and Salmonella, recall creep, can and lead follow-up.

The guys talk about the rising success of a vegan meat company and the challenges going from a concept to a growing business. Don and Ben then chat about the milkshake/ice cream machine hacking and issues related to safety and food safety. They talk about people talking about them talking about Daily Harvest being linked to illnesses in 2021. The guys go on to discuss an outbreak of pathogenic E. coli that was linked to raw milk cheese in the UK as well as Ben's holiday food safety conversations with his Canadian family. The show ends on a deep dive into a high school cafeteria outbreak in Illinois that may or may not have been linked to a food handler.

Food Safety Talk 297: Bumps Bleeps Blorps

The guys talk about holiday entertainment viewing and their favorite episodes and movies to watch. The actual food safety content also takes a holiday focus with a chat about eggnog and fruitcakes. Ben plays a game of "guess the foods" with Don (and he gets most of them correct). The discussion goes to allergen denaturation during cooking and histamine production in fish (and one of Ben's favorite Raleigh outbreaks). The guys end the show on a cinnamon/apple sauce deep dive, and their best guesses as to what might be happening in a national situation related to lead intoxication.

Food Safety Talk 296: Speaks Like An Ordinary Guy

The guys go on to talk about their travel packing and entertainment choices. Ben brings a question to Don about some improperly cooled bubbling stew that came from a local non-profit. They go on to talk about weird hydrated rice in a restaurant. They guys go on to talk about some Thanksgiving follow-up including Ben's turkey slashing onto an apple pie and then cantaloupe safety talk. The show ends on ghost kitchen risks (not the types the guys often think about), some followup on IHOP syrup, delivery ice cream and shipped turkey.

Food Safety Talk 295: No Spray, Jerry!

Ben and Don start the podcast talking about the mystery of Ben's microphone and audio quality. They go on to talk about Ben's current and Don's previous participation the National Advisory Committee on Microbiological Criteria for Foods. The conversation goes into Ben's trip to see food science and fermentation microbiology in action as part of a series of distillery tours in Kentucky. Ben then diverts the conversation to Hockey Safety Talk (and Don indulges him) as they talk about neck lacerations and concussions in amateur and professional hockey. Getting back to food safety the guys take a test to find out what foodborne pathogen they are. They get into a discussion about social media and food safety, recalled foods and end the show on a thanksgiving turkey thawing deep dive.

Food Safety Talk 294: I'm On Jesse Ventura

Ben and Don then do a little bit of Department Head/Chair talk about pandemic-influenced work styles and get back into each others team and interaction strengths and weaknesses. Ben talks about meeting with a friend about labeling and the complicated history of why food labels are the way they are. Don talks about stuff he learned about AI. The guys talk about microplastics from cutting boards and mitigating biofilms on food contact surfaces. The show ends on a sad and tragic note about a friend of both Don and Ben's.

Food Safety Talk 293: Norwegian For Horchata

The guys start the conversation with a video tour of their office spaces, which includes a litany of improperly canned foods (in Ben's office) and a cool microscope (Don's office). They talk about concerts, Don's son's wedding and Jury Duty. After a quick discussion on Canadian Thanksgiving (just known as "Thanksgiving" in Canada) and the Wire, the guys get into some feedback. Ben plays a new game with Don called "Guess the Headline" after reading a paper on ready to eat seafood. Don shares the results of some digging he did on Ginger Jake, a drink that was mentioned in a recent Risky or Not episode. After a quick detour to productivity and department head/chair talk, the guys talk about food at the state fair. The show ends with a quick conversation of the nuances of conducting public health and food safety research in developing countries.

Food Safety Talk 292: Does Anyone Remember Leftovers?

Don and Ben start the show jumping into things revisiting the devastating and huge E. coli O157 outbreak linked to a number of Calgary daycare settings. Ben talks about his trip to Portland for WAFDO and Don talks about his trip to Rome for an FAO/WHO virus meeting and the cool things they saw/heard. The guys talk about how a very artisanal method for canning sardines has likely led to botulism outbreak linked to a wine bar in Bordeaux, France. The conversation goes to milkshake and soft serve mixers, shakers and other machines and Listeria risks. In what is becoming Ben's favorite bits, they then discuss a couple of Apple News stories on dangerous foods and TikTok's obsession with leftover rice. The show ends on a discussion on revisiting a classic paper on washing prewashed leafy greens that was written by an all-star cast of scientists.
