Food Safety Talk 303: Three Turntables And A Microphone

Added on April 24, 2024 by Ben Chapman.

In this somewhat short episode the guys start talking about email addresses getting claimed away from Apple and their semi-hard outs. The guys go on to play a game of twelve unexpected ways you can get food poisoning (and Don lost badly). Ben and Don talk about highly pathogenic avian influenza and its impacts on the food system/food safety. The episode ends on a deep dive into followup from a Risky or Not episode and probabilities of getting sick from eating a dish made with (at least) raw chicken everyday.

Ben and Don start the episode with various topics ranging from notable alumni of Rutgers and Enloe High School in Raleigh to productivity/Getting Things Done. The food safety conversation moves to lead contaminated cinnamon in applesauce and a great New York Times article that provides a case study on the outbreak. The guys then go into a new law requiring bars in North Carolina to meet the Food Code requirements if serving food. They do a bit of followup on chicken washing and the show ends with a discussion on ultra processed foods.

Food Safety Talk 300: The Pat Venditte Rule

Added on February 9, 2024 by Ben Chapman.

Don and Ben start the show talking about some recent guest pitches they've received (and a what sounds like a fun fusion restaurant). They go on to talk about watching Astrid and Curb Your Enthusiasm and get into the food safety content by Ben plating a message he received from his grocery store. This leads to some recall communication talk. Ben masterfully gets Don to do some homework for him (and disguises it as a fun game, which it was not). The guys go on to talk about vibrio infections, the impacts of outbreaks on Chipotle and whether a toilet lid matters when it comes to the aerosolization of poop particles when flushing a toilet. They talk about agricultural education in classrooms and get into some followup on dry cleaning, .orgs and fried rice syndrome.

Food Safety Talk 299: Sweatin' To The N00bs

Added on January 30, 2024 by Ben Chapman.

Don and Ben start the conversation with the inevitable audio issues (it's not a bit) and after a diversion to the origin of Bluetooth, the issue gets traced to Don's wiring. Ben starts the non-food safety portion talking about The Curse (and how it made him feel dumb) and then things move into food safety through Nathan For You. Ben tells Don about his new obsession with the English Premier League, and coincidentally a job doing food safety things for one of their clubs. The guys talk about things that they would or could do if they weren't in food safety. The guys go on to talk about frozen corn and Salmonella, recall creep, can and lead follow-up.

Food Safety Talk 297: Bumps Bleeps Blorps

Added on January 3, 2024 by Ben Chapman.

The show starts with a discussion on Zoom-ready rooms, technology issues between Apple and non-Apple things and the great folks who help us all say, "it just works." The guys talk about holiday entertainment viewing and their favorite episodes and movies to watch. The actual food safety content also takes a holiday focus with a chat about eggnog and fruitcakes. Ben plays a game of "guess the foods" with Don (and he gets most of them correct). The discussion goes to allergen denaturation during cooking and histamine production in fish (and one of Ben's favorite Raleigh outbreaks). The guys end the show on a cinnamon/apple sauce deep dive, and their best guesses as to what might be happening in a national situation related to lead intoxication.

Added on December 31, 2023 by Ben Chapman.

The show opens with Ben figuring out that he's been using his microphone incorrectly for a while (like 100 shows). It's fixed now. The guys go on to talk about their travel packing and entertainment choices. Ben brings a question to Don about some improperly cooled bubbling stew that came from a local non-profit. They go on to talk about weird hydrated rice in a restaurant. They guys go on to talk about some Thanksgiving follow-up including Ben's turkey slashing onto an apple pie and then cantaloupe safety talk. The show ends on ghost kitchen risks (not the types the guys often think about), some followup on IHOP syrup, delivery ice cream and shipped turkey.

Food Safety Talk 295: No Spray, Jerry!

Added on December 4, 2023 by Ben Chapman.

Ben and Don start the podcast talking about the mystery of Ben's microphone and audio quality. They go on to talk about Ben's current and Don's previous participation the National Advisory Committee on Microbiological Criteria for Foods. The conversation goes into Ben's trip to see food science and fermentation microbiology in action as part of a series of distillery tours in Kentucky. Ben then diverts the conversation to Hockey Safety Talk (and Don indulges him) as they talk about neck lacerations and concussions in amateur and professional hockey. Getting back to food safety the guys take a test to find out what foodborne pathogen they are. They get into a discussion about social media and food safety, recalled foods and end the show on a thanksgiving turkey thawing deep dive.

Added on October 17, 2023 by Ben Chapman.

The guys start the conversation with a video tour of their office spaces, which includes a litany of improperly canned foods (in Ben's office) and a cool microscope (Don's office). They talk about concerts, Don's son's wedding and Jury Duty. After a quick discussion on Canadian Thanksgiving (just known as "Thanksgiving" in Canada) and the Wire, the guys get into some feedback. Ben plays a new game with Don called "Guess the Headline" after reading a paper on ready to eat seafood. Don shares the results of some digging he did on Ginger Jake, a drink that was mentioned in a recent Risky or Not episode. After a quick detour to productivity and department head/chair talk, the guys talk about food at the state fair. The show ends with a quick conversation of the nuances of conducting public health and food safety research in developing countries.

Food Safety Talk 292: Does Anyone Remember Leftovers?

Added on September 26, 2023 by Ben Chapman.

Don and Ben start the show jumping into things revisiting the devastating and huge E. coli O157 outbreak linked to a number of Calgary daycare settings. Ben talks about his trip to Portland for WAFDO and Don talks about his trip to Rome for an FAO/WHO virus meeting and the cool things they saw/heard. The guys talk about how a very artisanal method for canning sardines has likely led to botulism outbreak linked to a wine bar in Bordeaux, France. The conversation goes to milkshake and soft serve mixers, shakers and other machines and Listeria risks. In what is becoming Ben's favorite bits, they then discuss a couple of Apple News stories on dangerous foods and TikTok's obsession with leftover rice. The show ends on a discussion on revisiting a classic paper on washing prewashed leafy greens that was written by an all-star cast of scientists.

Food Safety Talk 289: PEE-hack

Added on August 15, 2023 by Ben Chapman.

Don and Ben are back from IAFP and other trips and get things started talking about famous quotes related to New Jersey and North Carolina and Ben's rafting trip to West Virginia. They talk about some department head/chair things and Getting Things Done and then get into food safety stuff. They do a round of their favorite bit, ABC CDC FDA+ (PHAC edition). The discussion goes to research, as part of his IAFP preparation Ben stumbled across a few papers that he wanted to talk to Don about. These papers took them on a discussion path about pizza held at room temperature, food safety while camping and cut produce held at room temperature (and the complicated regulatory landscape around that in the US). They ended the show talking about FDA warning letters around Delta 8 edibles.

Food Safety Talk 285: Meat Probe, Meatwad, Meathead

Added on July 9, 2023 by Ben Chapman.

Don has returned from his sojourn in Japan and the guys jump right into things talking about some of the stuff Ben is watching with his kids. The guys talk about a couple of folks who meant a lot to them, Dave Macinga and Bill Schaffner, and then jump into some food safety stuff. They start with cleaning viruses off of strawberries (uh, sort of). After a detour to AI, they jump into a discussion of a popular BBQ bloggers approaches to food safety temperatures (and the shade he throws at one of the federal food safety agencies). They then dismantle a list of foods that food safety professionals don't eat before talking about a bot-related recall of pizza oils. They end the show with some food safety news and feedback on sink pasta.
